Description
Sourced from the NSW Hilltops region, at an elevation of around 600m.
Tasting Note
Le Rouge, meaning “the red” in French, is a classic Bordeaux blend of Cabernet Sauvignon and Merlot. It combines the dense, full bodied structure of Cabernet with the rich chocolatey middle palate of Merlot!
Vineyard
The fruit was sourced from some of the Hilltops’ finest vineyards and was picked in early April at around 13.5be.
Winemaking
After picking, the fruit was crushed and destemmed into open top fermenters, where a warm, even fermentation took place. Once pressed, the wine was matured for 10 months in French oak barriques, approximately 15% of which were new.
Cellaring
Though drinking beautifully now, this fine wine will gain further complexity and interest over the next 8-10 years.
Food Match
A perfect match for roast duck or chicken, red meats and hard cheeses
Awards & Reviews
“It’s complex and immediately appealing on the nose, showing dark berry, dried herb, cured meat and star anise nuances. The palate displays ripe fruit intensity with a savoury undertone, finishing silky and lingering. At its best: now to 2033.” 92/100 Sam Kim, Wine Orbit
