From one of Australia’s finest sparkling wine regions, this excellent wine shows classic citrus and melon fruit, complex earthy and bready notes and a crisp lingering finish.
Fruit was sourced from Tumbarumba, Coppabella Vineyard and harvested in March from several key sites.
After picking, the fruit (85% Chardonnay and 15% Pinot Noir) was gently pressed to stainless steel vats and cool fermented and the second fermentation was via the charmat method. The wine spent a total of 7 months on lees providing complexity, fine bubbles and a creamy mousse which complement the delicate citrus flavours that are typical of the region.
This fine wine will drink beautifully over the next 3-4 years.
This delightful wine is an ideal match for canapés and shellfish.
