Tasting Note
Il Rosso, meaning “the red” in Italian, is a typically modern, “Super-Tuscan” blend of Sangiovese and Merlot (5%). The wonderful savoury flavour and texture of Sangiovese is well complimented by the rich chocolatey middle palate of Merlot!
Vineyard
The fruit was sourced from some of the Hilltops’ finest vineyards and was picked in early April at around 13.5be.
Winemaking
After picking, the fruit was crushed and destemmed into open top fermenters, where a warm, even fermentation took place. Once pressed, the wine was matured for 10 months in French oak barriques, approximately 15% of which were new.
Cellaring
Though drinking beautifully now, this fine wine will gain further complexity and interest over the next 5-8 years.
Food Match
A perfect match for classic Italian foods such as pasta with a tomato-based sauce or pizza.
