Sourced from one of the finest vineyards in Young, NSW, in the heart of the Hilltops region, at an elevation of around 600m.
Tasting Note
A full bodied style, our dense, dark Cabernet shows lifted ripe cassis fruit, subtle tones of dried herbs and cedary oak with a long gently tannic finish.
Vineyard
The fruit was sourced from Ballinaclash vineyard and was picked late March at around 13.5 be.
Winemaking
After picking, the fruit was crushed and destemmed into open top fermenters, where a warm, even fermentation took place. Once pressed, the wine was matured for 10 months in French oak barriques, approximately 15% of which were new.
Cellaring
Though drinking beautifully now, this fine wine will gain further complexity and interest over the next 5-8 years.
Food Match
An ideal match for red meats, hard cheeses and game dishes.
